Quick Shrimp Stir fry

This quick shrimp recipe makes for a relatively nice meal that suits the end of summer remarkably well. Lightly seasoned and mainly flavored by one of my favorite flavor blends: garlic, ginger and chiles, this recipe is a quick fix for a tasty supper. Pretty healthy too, high in protein and full of veggies! It should be noted that the secret to getting this dish just right is cooking the vegetables and the shrimp to perfection, overcooked shrimp and veggies lose all of their character. With that said, enjoy!



Serves 2 big eaters, 3 average eaters
Serve with rice, I used basmati
Prep. time 20 min.
Cook time ~6 min.

Ingredients:
-15-20 large shrimp, raw
-3 cloves garlic, grated or crushed
-1.5 tbsp of fresh ginger, grated or crushed
-Crushed dried chili to taste (if you have no idea and don't mind a slight zing to you food go for 1/2-1 tsp)
-1/2 onion (I used red) can be substituted for green onions (this really isn't haute cuisine)
-1/2 red pepper roughly chopped
-3 carrots thinly sliced into wee rounds
-1/2 head of broccoli torn into bite sized pieces
-1 tsbp. dark soy sauce
-1 tsp. honey
-1 tsp. brown sugar
-half a tbsp. lime juice
-1-2 tbsp. peanut or canola oil 

Prep.
1) Prepare all vegetables, cutting, slicing, dicing, grating, etc. as mentioned above
2)Combine dark soy sauce, sugar, honey and lime juice, mix vigorously
3) lightly steam sliced carrots and broccoli bits until they begin to soften, as an end result you`ll want vegetables that are semi-soft but not limp, you want to preserve some crunch. Because of this you only want to steam them lightly until slightly cooked, I tend to steam them in a period within a minute
4)Heat oil to medium high heat in a wok or in a frying pan until very fluid and easy to swish along the bottom of the wok/pan/etc.
5) Add diced onions heat until soft
6)Add ginger, garlic and chili
7)Add shrimp cook until one side has turned pink
8)Add peppers, broccoli, carrots and sauce (after mixing vigorously again) and flip shrimp
9) Continue cooking until peppers are very slightly softened and shrimp are cooked just to the stage of pinkness
10) Serve hot with rice

  2. Hi Cedric! You seem to gave a good one there! Otherwise, I'd recommend a recipe like this one but marinating dark meat or breasts from a chicken with some soy sauce, fish sauce, lime and garlic overnight before cooking it in a wok at high heat. Hope this helps!
